I take it then you can only take 1 shim out at a time and then replace it and then move onto the next, or can I take all the shims out before I replace any ? :)

One at a time only.
If you allow the cam to run direct on the bucket you risk damaging the cam and buckets as the cam will jam against the raised lip on the bucket.

One at a time, measure each gap and each shim and when you've got all eight on paper, work out which ones you can swop around to reduce the amount you will need to get.

Guys

what would the valve clearances be for a gpz1100b1 1981 engine
with 1983 gpz11 unitrak cams.
The buckets are over not under so dont need to take out the cams.

re the "got no clearance at all" problem- I bought 1 of the very smallest shims , so if I ever get no clearance , stick the smallest shim in , check its clearance (cos it'll always give clearance) then use the table to find the right shim
