I am just trying to ensure that I don't make any silly mistakes as I have never worked on an engine using shims before, especially ones in mm, or in fact microns, when specified clearances are in thousands of an inch.

You need to go for 0.10 to 0.15mm ( 4 to 6 thou )
Kawasaki amended the clearance specs to the wider figures and only specified the imperial equivalent for the Americans who refuse to go metric and for the early 70's mechanic who didn't have a set of metric feelers coz they were only used to working on oily old brit stuff.
Also I strongly advise not to use shims as thin as 205mm for the head rebuild.
You will soon need to pull the head apart again to trim the valves as you will quickly run out of shim sizes as 200 is the thinnest.
You need to set the valve heights now so that you start with at least 2.5 mm shims which will ensure plenty of miles before major head work is needed again.
