A new project.

Having finished my Z650, I'm ready to start thinking about my next project, but I have too many ideas, and not enough experience to decide what to do.
I want to do more of the work myself, so its not going to be a full restoration, I was thinking of a cafe racer (seem all the rage at the moment), but may not be able to do any engineering work (cutting bits off and welding bits on), then I was thinking of a two stroke (engine easier to work on). It would have to be cheap so that after I've taken my hammer and screwdriver to it, I won't lose too much money if it all goes pear shaped.
So, my question is, can anyone reccommend, or more importantly say stay well away from, any mid range bikes that have parts freely available, and are easy to work on? Preferably a twin (prefer that look on a cafe racer).
Any advice would be welcome.
Cheers

if you want to do a 2 stroke then GT250 's are cheap to pick up as projects. picked mine up for £100, bought a NOS head for £15 ........... They haven't got to crazy prices like rd's or Kh's

Thanks for that, I must admit, I was looking at those before I got the Z.
Does anyone have any views on xz550s? They're a V twin from back in the 80s. I like v twins and think this one might make a good cafe racer.

I did have a look at an SRX6, but I've finally ended up with another z650!
I haven't picked it up yet, and its not all there, but the main bits look clean in the pics, and it was cheap.
I'm going to try and take my time with this one, and not spend so much money. I'll post some pics after I pic it up. Got it off e-pay, a yank import.

Love my XBR500, removed the twin pipes and put on a Predator system, awesome sound.
