when out today when riding over a dropped kerb, the front forks gave a bone jarring knock, felt as if the front tyre was very low and hit the rim (first thing I checked), could not enough oil or too much cause this?

Too much oil certainly could.
Stick a cable tie around the fork and see how much travel you have.

You mean when on stop and rock on the front brake or while riding and brake hard?

Many years ago I tried raising the fork oil quantity by 45ml.
I then bought a tool to take it back out again.
From memory as standard I had about 3 or 3.5 inches of movement but with the raised level only 1.5 inches.
You really need to stomp on the brakes to find out exactly how much movement you've got.
