During the winter motor rebuild, I am going to fit a set of cams with a valve lift of .395, duration of 284. Currently the shims are all between 250/260 - what shim sizes do I need to drop down to?

Unless the base circle of the cam is different (which is shouldn't be), you shouldn't need to change shims. The reality is you might need to tweak the clearance a little as manufacturing tolerances can vary a little between cams.
