I am fitting a gpz1100 motor into a 750 frame and I think the 750 motor will go into a 1000 without much (ish) hassle

I haven't done it, and I'm not sure many, if any have, but I think the biggest issue you may have is making it look right.
The following is from memory, from looking into this in my youth, feel free to shoot me down, anyone...
The GPZ motors fit in a z650/750 frame because they don't have the kickstart casting in the crankcases behind the clutch, the z1000A series motors don't fit the 650/750 frames for that reason.
The gap behind the cases may or may not look right. A big motor squeezed into a small frame looks meaty, a smaller motor with lots of room around it - you'd have to see. If you move the engine back, the front may look odd.
Otherwise making engine plates and spacers can't be any more difficult than a GPZ into a 650, and that's been done a few times.
As I say, this is from memory, I don't profess to be spouting wisdom from something I'm just in the process of doing.
