For the Z1000J
What are the recommended sprocket sizes, front and rear when doing both
(a) a 17 inch wheel conversion
(b) 630 to 530 chain and sprocket conversion

Just keep the final drive ratio the same - around 2.2:1

I'm running a 19 front & 42 rear on me Harris with 17" wheels & 530 chain and it's gearing is pretty good - could even go a smidge higher geared (less tooths on rear) no probs
And on the 7th day... Zeds were created!

You want 1.92 to 1 to equal the original ratio you had with the 18"s.
If you have a chunkier modern swinger then somewhere around 19t front and 38t to 40t rear will help the chain clear the top run.
