Should I apply the gasket sealer to the lower or upper case and how much goes on?

Either way.
You only need a light smear if you put to much on it it will all squidge out and end up in your oil strainer blocking the pump eventually.

Yes I watch it all the time and have been sticking to it religiously. But it doesn't go into this type of detail just tells you to do it! I know it probably obvious but just want to get it right.

Very early Z1 engine being stripped/rebuilt in the video by the looks of the oil pressure switch housing.
