Ive never had to replace one of these before, but it looks like in keeping with other seals you have to destroy it to get it out.
Any tips or preferred methods please guys before I start ?

I tapped mine out using a suitable sized socket, you could re-use it if you wanted to, a new one wasn't expensive.
Installation is the reverse of removal, I applied some sealant but I don't think it was necessary - a peace of mind sort of thing.

On the later type covers where you cannot get a socket on it from the back. If it's in good condition nice and clear squeeze bathroom silicon sealent into it from the inside of the cover through the small slit. Once set you can knock it out clean up and re use. If cloudy just get the biggest flat screwdriver in and knock her out. Always use an appropriate sized socket to knock them back in.
