Will be looking for an engine soon for a MkII project, if I cant find a proper MkII motor can I make an older engine look like one by changing the covers?

YES! Except the alt cover as the earlier engine has a smaller alt taper and the associated cover is smooth apart from the DOHC logo.
The later mk2 has a larger taper and different design alt with a cover that has ribs/finning.
Fitting a mk2/st crank would solve that problem and allow the correct alt and cover to be fitted.

If you do fit a MK ll crank, you must change the cam wheels as well.
MK ll runs 32t crank & 16t cams. Earlier motor runs 30t crank & 15t cams. They won't 'mix & match'
