Piston height question?

Right, I'm using a big block of unsure origin (think it came from Rod Pallant) with 1200 (10.25:1) Arias pistons, cos it's all I've got!
I don't have a stock block to compare heights, and I know it's been skimmed at least once so I dry fitted it to check the piston height and found that they stick out the top of the block by .010" without a base gasket fitted.

So the question is, what thickness base gasket should I use to ensure a safe squish clearance? For that matter... what is a safe squish gap?
