Bigmac, stainless is the way to go with spokes, I have several Z's and the spokes, whether zinc plated or cadmium will rust before any other item. With stainless it's an item you can forget.
I don't think it is possible to do one spoke at a time.
I lace the spokes myself then pass to an expert for truing and tensioning, usually half the price. The first time is not easy after you have done a couple you get the drift.
With standard rims for Z1, Z1A, Z1B and Z900 A4 the hub is symmetrical to the rim so you don't have to measure the offset, unless you have an offset sprockets/ swingarm. Do watch the z1000A1 & A2 spoke structure as the rim is omni-directional.
