The chances are it is sidways movement of the cams giving the noise on cold idle, there is always some kind of wear pattern on shims as they spin due to the way the cams are made with a slight taper if they were not and the shims did not spin you would end up with a grove in the shim, also shims are not even all the time, i have always kept an unused 2mm one and that has a surface variaton of 0.003mm, there is probably nothing wrong with with your bike, check the sideways movement of the cams put it back together and use it.
