Right then, Set screws at 11/4 each. Now starts! Runs like a pig though. Backfiring around 3K RPM. Do i now need to adjust both sets of screws? Should they both be the same each time?

Si, I doubt the mixture screw or the air screw settings alone are responsible for it running that badly, as has been suggested I would start with a thorough internal clean first, then set your float heights and check the needle valves are shutting off the fuel, to begin with I would set the needles on the middle groove (std) and only then would I experiment with the jets starting with the pilot jets. You say it's running pods but in the picture it looks like a standard airbox or are my eyes that bad? I assume you've checked the static timing and the ignition side of things first? also check you have no air leaks on the manifold rubbers and that all the rubber caps are in place on the vacuum take offs, I have a couple of fuel height tools here to set them accurately if you want but measuring the float height should suffice to begin with.

my Zeds don't have the metering screws underneath, but my S*z*k*s do, and I spent a LONG LONG time working out how to adjust them either after cleaning or after someone else has already played with them. Please note that my experience is always with standard carbs, airbox and pipes.
The technique I use is (1) set the 4 meter screws ( underneath ) to 5/8 turn out (2) set the pilot air screws to what they should be in the manual
start the engine and adjust tickover until it will either run at all, or run near right revs (4) carefully adjust each metering screw in or out until the tickover just doesn't stumble. You want the lowest setting possible ( I've adjusted carbs to settings ranging from 1/4 to 3/4 out ). Now adjust pilot air screws slowly to try to maximise the tickover...should eb close unless internal problems of blockages.
Now take it for a run..... the poor slow running, and especially the 3,000 rpm glitch/surging DOES seem to come from the metering screw settings in my humble opinion, but I'm open to be corrected. If youstill have some running issues arounr 3,000, take a small screwdriver with you and add 1/8th turn in or out to all 4 carbs on the air screws and find out which way it gets better at 3.000....tickover might be worse, don't worry. When you know which way improves the carbs, put them all back to where they were, and adjust 1 at a time . and try it again.
