A carb slide 'hung up', needle clip come off or main/needle jet fallen out ? I'd remove the airbox/carb rubbers, check the slides are seating and if that doesn't show anything obvious block off the inlet of each carb to see which one is causing the engine to race. Well my new output shaft turned up and as a matter of curiosity I compared the two. The old one (with signs of the shaft fretting in the bearing) is some 0.015 mm thinner than the new 'un. To answer my own bearing question... A browse through CMSnl's parts diagrams shows that the 1100 Unitrak and Z1000 share all of the same gearbox bearing part numbers. The Z1 and A4 have different numbers for the cup shaped bush on the input shaft and the big output bearing on the drive shaft but no ...

Presumably the tacho feed is from one coil? You could feed from both coils which will double the pulses to the tacho. You'd obviously need to put a diode in each feed line to stop the coils being powered through the common tacho connection. WARNING this advice is from someone who's electronics train...
